4 mini flour tortillas, warmed 1 small brown onion, finely chopped 200 g chicken breast, finely chopped 1 tbsp tomato paste 250 g canned corn kernels, drained 1 tomato, finely chopped ½ cup grated mozzarella ¾ cup light Greek-style yoghurt 320 g watermelon, peeled and chopped
Method
Preheat oven to 220 °C (200 °C fan). Spray muffin tin and press tortillas into cups. Spray a pan with oil, cook onion 5 min until soft. Add chicken, cook 5 min until browned. Stir in tomato paste 1 min, then mix in corn and tomato. Spoon filling into tortilla cups, top with cheese. Bake 12 min until golden and cheese melts. Serve with yoghurt and watermelon.

1 small pizza base or 2 mini naan rounds 2–3 tbsp tomato pizza sauce ½ cup shredded mozzarella/Any Cheese 10–12 pepperoni slices 1 small apple
Method
Preheat oven to 200 °C. Place pizza base/naan on a tray. Spread sauce, sprinkle cheese, add pepperoni. Bake 8–12 minutes until cheese melts and edges turn golden. Cool, slice pizza, pack with apple slices.

4 eggs ½ cup milk 1 small carrot, grated ½ zucchini, grated ¼ cup grated cheese Salt & pepper Muffin tin, lightly oiled

Preheat oven to 180 °C. Whisk eggs and milk, season with salt and pepper. Mix in carrot, zucchini, and cheese. Pour into muffin tin cups ¾ full. Bake 15–20 min until set and golden. Cool slightly and serve warm or cold.

Heat a non-stick pan over medium heat and lightly spray with oil. Place one tortilla in the pan, sprinkle cheese evenly, add deli meats and corn, then top with the second tortilla. Cook about 2–3 minutes until the bottom is golden, flip, and cook another 2–3 minutes until the cheese is melted and both sides are golden brown. Remove, cut into wedges, cool slightly and pack.
